The distillery for Union Horse, a local award-winning, small-batch distiller, was once an empty flooring showroom.  Wellner facilitated the conversion of the large 13,000 SF open space into the various areas integral to the distilling process.  This includes layouts for milling, mashing, fermentation, and distillation, culminating in their 500-gallon column pot still situated behind the glass storefront and visible to patrons in the tasting room.  After distilling, whiskey is stored and aged in the on-site barrel house until maturation and bottling.
